Like a phoenix from the ashes, these sauces are the spawn of the dumpster fire we called pandemic living. With more free time than I needed, and uncertainty at every corner, I turned to the kitchen to lose myself in my favorite medium, food.
I know a LOT about food and cooking, but I typically stay in the lane of pantry meals, and what I have on-hand. I rarely explore techniques that require inactive time, or waiting. Who wants to wait, right? Curing and fermentation always intimidated me. With quarantine being part of normal life, I had no excuses. Fermentation quickly became an obsession.
Now I just want to share.
